What shall we eat today?

Hi there,
It's my first time writing here - it's always nerve wrecking to start something new, isn't it?
The State of Emergency has finally been lifted in Japan, although we're feeling the affect of COVID left right and centre still (of course.)
One thing that kept me going for the past year since moving to to a foreign country away from my familiar surroundings was... cooking.
There were days I didn't even want to hold a pencil, but turning on the stove to boil a pot of water, or getting the chopping board out to slice some vegetables became a soothing ritual that stemmed from the necessity to, if I must say without being too dramatic, live.
The thing was, everyone one around the world was probably in a similar mindset. After the initial shock the Pandemic, we still had to move on with our life. But this time, we had a bit more time on our hands from all the 'stay home' we had to do. Also having to be conscious about building up the immunity to avoid any nasty viruses.
So began my journey of simmering and stewing, cutting and chopping. Throwing herbs and spices in a pot and stirring it like a Witch by her cauldron. Magic.
After a year of that chopping and stirring, and having a bit of time on my hands due to the second around of State of Emergency, I was ready to illustrate my cathartic routine I had going.
So here is it, our weekly menu, starting from 7th of Feburary, 2021.
Started making a conscious shopping list after going to the grocer, not before, to be mindful about what was in the fridge. I don't like making a list before shopping since it feels limiting to be only shopping for things that was written out before seeing all the fresh and seasonal produces. I do love Japan for their seasonal goodies.
